INGREDIENTS

Coriander         1 kg
Fennel seeds   1 & 1/2 tbsp
Fenugreek        1/2 tbsp
Dried chilli         7 Nos
Cinnamon         1 piece (3 cm)
Cloves               3 Nos
Curry leaves      3 stems

Black pepper     1/2 tbsp (optional

How to make roasted masala powder

Clean the coriander and place it in a large pot. Add the remaining ingredients one at a time. Stir continuously over medium flame. Roast the ingredients for an hour. Afterward. leave it to cool down. Grind it to a fine powder.
